We were lucky to catch up with Claire Whitworth-Folsom recently and have shared our conversation below.
Alright, Claire thanks for taking the time to share your stories and insights with us today. Crazy stuff happening is almost as certain as death and taxes – it’s technically “unexpected” but something unexpected happening is to be expected and so can you share a crazy story with our readers
One of the craziest things I think so far is how we stumbled upon some of our closest friends. At the time Savoring Colorado had just really gained momentum and we use to do LOTS of Q&As when we were based in Fort Collins. Dan and I had really gotten into a local coffee company and were buying their coffee weekly so I knew we just had to get them to agree to a Q&A. Naturally, I didn’t want to scare them off and contacted them for a Q&A when they suggested an afternoon of cupping. For those of you curious about what cupping is in the coffee world it is when you test the quality of the batch of coffee using a certain technique. We had a blast cupping and learning about where they were sourcing their beans, their background, how they chose the name of our favorite coffee we were addicted to and so on. As the afternoon went by I think we were there over 3 or 4 hours. Dan and I realized how cool it would be to go grab a beer with the owners and how much we wanted to be their friends but didn’t want to be weird. Luckily a few days went by and Dan ran into one of the owners in town and had invited us for a beer. We later learned how equally excited they were for the Q&A and how much we all had in common. Many beers, dinners and children later we are great friends and seriously I do not think it would have ever have happened without our business. It is truly one of our favorite things about Savoring is meeting people and learning their story.

Claire, before we move on to more of these sorts of questions, can you take some time to bring our readers up to speed on you and what you do?
Savoring Colorado is a blog based on delicious food run by myself, Claire and my husband Dan. We originally were Savoring Fort Collins and changed the name in 2018 when we moved to Denver. Dan and I started Savoring Colorado to really share our foodie experiences as we have a love for food and local goods. The blog itself started as Q&As of local small businesses in town and has grown into recipes, local food and starting this year we are hoping to dip our toes into some lifestyle content per requests. We absolutely love local businesses and really love to share our experiences.

Can you tell us about a time you’ve had to pivot?
As a lot of stories our now we did really have to pivot at the start of Covid when everything started shutting down. Our bread and butter at the time was sharing food and drinks out and when the shutdown happened we really realized we couldn’t do this as easily anymore. At this point we started making fun drinks at home or trying to get our hands on fun brews for drive up services since it was even hard getting groceries and making normal meals at home. The upside was this was around the time we started our garden at our new home which was really fun content to share but we had to think out of the box to try to keep our existing followers let alone trying to gain new followers. Also during this time is when we had to start thinking of other ideas such as lifestyle. Once things started to open up again and we felt comfortable going out I got pregnant which also put a pause on the brews we were use to sharing. All in all our blog has really taken a shift since 2020 but we are really excited about the new route it is going.
