Chelsea, thanks for joining us, excited to have you contributing your stories and insights. We’d love to hear the backstory behind a risk you’ve taken – whether big or small, walk us through what it was like and how it ultimately turned out.
In 2020, I started my own catering business called “Let’s Roll”. This consisted of variations of different flavors of egg rolls. It was so successful that I dropped to part-time hours at my full-time job and put it all on the line. However, with success and taking risks also come with disappointments, lessons you will learn, and opinions on running your business. Ultimately, I took the risk because I’ve always had a passion for cooking. It’s one of my love languages and its honestly a stress reliever. When I started this business, I didn’t have the right people around me and lacked confidence, which caused me to close my business at the end of 2021. I allowed the opinions of others, and having a huge heart put me in a totally uncomfortable situation. I remember giving out free products to people that I knew just because they called me a friend. I would miss out on money because I wasn’t organized. Fast forward to now the year of 2024. I am more confident, surrounding myself with like-minded individuals, and more focused than ever. I am ready to reopen my business and shift it to a complete new start. My advice to any entrepreneur would be “take your time”. Plan your business, make sure you surround yourself with the right people and good energy, and remain focused.


Chelsea, before we move on to more of these sorts of questions, can you take some time to bring our readers up to speed on you and what you do?
First and foremost, I’d like to think of and call myself “The Queen of All Trades”. Ultimately, due to my wearing multiple hats. Full time I’m a Leasing Manager managing a property and with my other time I’m a wellness coach for Herbalife and Caterer. I love what I do in the sense of helping people find their new home however, my passion is helping people look and feel their best and FOOD. I love to prepare meals and it’s honestly a great stress reliever. My next move will be Culinary School to expand my palate and strengthen my skills. I would say to be successful in anything you do you have to be disciplined. I tell my clients this all the time. There will be times you may have to miss out on outings with friends, there may be times you can’t eat certain foods if it will interfere with losing weight if that’s your goal, and also times when you will have to sacrifice things to get to where you need to be. I believe what sets me apart from others is my heart. I am always thinking of ways I can help others. I do my best to lead by example. I also believe and let my clients know we are ALL human. We will make mistakes however, its all about how you recover from those mistakes. Pick yourself up and never give up.


What’s a lesson you had to unlearn and what’s the backstory?
I would say thinking that everything is about me and taking everything personally. This applies to my career and my businesses. Often I would allow so many things to affect me and act out of impulse. This isn’t healthy for anyone to do. I remember a lot of successful business owners and my wife telling me things about my attitude and giving me amazing opinions and I would never be accountable for my actions or get offended easily when they were just looking out for me. It is truly hard to find people who genuinely want the best for you. I also had to realize everyone was not my friend. The people I would surround myself with truly did not have my best interest and honestly didn’t support me. I lost a lot of potential client relationships due to whom I surrounded myself with and my attitude. People do not want to work with a know-at-all all or someone who lacks accountability. I had to learn to listen and then talk. Be a sponge and soak up the good ideas that people provide you and apply it to the pieces of your brand you choose. The moral of the story take your ego out of it.


We’d love to hear a story of resilience from your journey.
I have had so many letdowns in my life. I have had so many people come and go and I always seem to recover. Prayer is the answer for me. I talk to God. What helped me was changing my victim mentality. I used to ask “Why me” or “Why can’t these things happen for me” However, I wasn’t putting in the work to get to a better point in my life. I remember so many of my past “friends” would order from my business, I would provide them with with product or service and they would never pay me. I used to cry, stress, and remain friends with them just because I was desperate to have a friend around me. Looking back on my past I always state that my confidence just wasn’t there. I didn’t believe in myself so I settled for whatever came my way even when it came to a job. Now I can truly say I will never settle for less, I read the room and if I feel like something or someone isn’t for me I eliminate it immediately. Those people from my past no longer have access to me they can just watch from afar. I do not hold grudges I simply put in the work to grow every single day. Forgive but never forget. I remain good-hearted because God has blessed me and my family tremendously.
