We were lucky to catch up with Chelsea Goebler recently and have shared our conversation below.
Chelsea, thanks for taking the time to share your stories with us today Over the course of your career, have you seen or experienced your field completely flip-flop or change course on something?
Interestingly enough, it’s not that my field has flipped upside down…yet, but I am seeing drastic changes in the overall concentration of the field. Nutrition and dietetics is primarily focused on managing chronic diseases from a very clinical perspective. There was also a lot of emphasis on weight and weight management. Weight (over or underweight) being one of the main driving forces for diseases. Hence, why dietitians get the rep of putting people on diets to better their health. Of course, I’m not denying that there is significant research and evidence to support these viewpoints and they are still valid ways to better certain peoples/populations health. However, what I’m seeing more recently is this shift in how we view weight and the stigma behind it. Less dietitians are wanting to focus on weight management and instead, focus on whole body wellness…from the inside out. Relating what we eat and how our body performs, back to how our mind and body function as a whole. It’s becoming less about “weight loss for health” and more about “health at all sizes” and “body neutrality/positivity”. Dietitians are education more on, “how are we taking care of ourselves and honoring our bodies to our best abilities”…because if we do this, daily, then we can also prevent disease. The dietitian profession is moving from a purely clinical viewpoint; ie; xyz to get an end result, to more of an intuitive and functional approach.

I’m a born and raised Texan, I grew up in the Dallas/Fort Worth area in a small town (well not so small anymore!) called Mansfield. I grew up playing soccer and had a slight obsession with hippos and mini coopers 🙂 I went to Texas State University for both my undergrad and master’s program where I initially thought I was going to be a fashion major. However, that quickly changed after I took my first fashion class and realized I was in the wrong field. So, what drove me to get into the nutrition world? Well it was my own struggles. Growing up I was always active, I loved exercising but didn’t really treat my body well in terms of what I ate (or didn’t eat). I had body positivity issues and always found myself comparing my body to others- I wanted to be perfect, but there’s no such thing. I also had ZERO understanding on how to eat right to fuel my body and feel good in my own skin. So, since I knew I already had some obsession with food per se, I took a nutrition class and fell in love. It taught me how to love myself again and it gave me a real understanding of how to feed my body good food so that I could truly love myself! Also, I grew to accept my own struggles and wanted to be able help others heal in the same way — with food, not without it!
My practice (renamed to Mindfull Nutrition earlier this year) is now about 2 years old and has grown! It’s not just me anymore, I’ve hired another dietitian, Ashlyn Greene, to work along side me! Mindfull Nutrition is built upon the strategy of using food-as-medicine, evidence- and practice-based protocols, intentional exercise, and integrative approaches to empower clients to heal and thrive from within. We focus on food as medicine-centered interventions. Food as medicine is the understanding that food can serve as a direct contributor to dysfunction/disease or driver for optimal organ function and overall wellness. We utilize a food-as-medicine approach, mind-body counseling, functional medicine interventions and supplementation (as needed) to address and correct underlying issues to promote optimal health and whole-body function. Working with a dietitian that uses a functional nutrition approach can help you to improve overall balance within your body! We have worked with an array of patients ranging from elderly/dementia, spinal cord injury to weight management/bariatric surgery, eating disorders, pre/gestational diabetes and diabetes. I’ve worked in long-term care facilities, acute care rehabilitation hospitals and primary care settings. My passion for teaching others how to use food-as-medicine and the mind-body connection stems from my experiences as a mom of two young girls, nutrition degrees and my own personal experience using functional nutrition throughout my pregnancies and postpartum, while nursing and feeding a baby with food sensitivities. If you could go back, would you choose the same profession, specialty, etc.?
100%…I’ve truly found my calling and being a dietitian in private practice just suits me! It brings me so much job satisfaction and I find that my passion for what I do is growing each and every day! If I were to have done ANYTHING different, it would have been to attend medical school right after I was done completing my dietetic internship and becoming a dietitian. Being a doctor is still something that is of interest to me (to go along side of my dietitian credential) and isn’t completely off the table!
Can you tell us about what’s worked well for you in terms of growing your clientele?
Word of mouth and growing a network of local providers that trust me with their patients needs. However, word of mouth is by far my best mode of gaining new and loyal patients! Building and maintaining relationships with my current patients is what truly has impacted my growing business the most. I take pride in being super relatable and connecting with my patients — I strive to do this with everyone that I meet! Also, building a network of local providers, therapists and specialists is easily what continues to drive constant business by mode of referrals.
