Balee, looking forward to hearing all of your stories today. Can you talk to us about a risk you’ve taken – walk us through the story?
Leaving the fine dining industry to start my wedding cake business was undoubtedly a bold move, but one that has proven to be immensely rewarding. The decision has allowed me to unleash my creativity, offering cakes that are not only delicious but also works of art that reflect the unique personalities and stories of each couple. This freedom to innovate has been a breath of fresh air, enabling me to create designs and flavor profiles that are truly one-of-a-kind.
One of the most fulfilling aspects of my new venture is the ability to connect with my clients on a personal level. Unlike the high-paced environment of fine dining, where the focus is often on efficiency and volume, my business allows me to build meaningful relationships with my clients. I take the time to understand their vision for their special day, listening to their stories and preferences to create a cake that is not just a dessert but a symbol of their love and commitment.
Moreover, starting my own business has given me the opportunity to achieve a better work-life balance. No longer confined to the demanding schedules of the fine dining world, I have the flexibility to set my own hours and prioritize what matters most to me. This balance has not only improved my quality of life but has also had a positive impact on my creativity, allowing me to approach each new project with fresh eyes and a renewed passion.
While starting my wedding cake business may have been a risk, it has been a risk well worth taking. The freedom, creativity, and personal fulfillment that I have found in this new venture have made it not just a job, but a true passion and a labor of love.

Balee, before we move on to more of these sorts of questions, can you take some time to bring our readers up to speed on you and what you do?
My journey to owning a wedding cake business has been a fulfilling one, rooted in my background as a pastry cook and later an executive pastry chef in country clubs and resorts. I started out in the culinary world as a pastry cook, where I discovered my love for creating beautiful and delicious desserts. Over the years, I worked my way up the ranks, eventually becoming an executive pastry chef.
While my time in the fine dining industry was rewarding, I felt a desire for more creative freedom. I wanted to break away from the traditional expectations of the industry and explore new avenues for my craft. This longing for artistic expression led me to start my own business, where I could let my creativity flourish and create unique, personalized cakes for each client that would fit every esthetic.
Drawing on my years of experience and expertise, I set out to create a business that would not only showcase my culinary skills but also allow me to connect with my clients on a deeper level. I wanted to offer more than just a cake; I wanted to offer an experience—an edible work of art that would be the unique highlight of a couple’s special day.
Today, my business is thriving, thanks to my dedication to excellence and my passion for creating unforgettable cakes. Each project is a labor of love, as I work closely with my clients to bring their visions to life. Whether it’s a whimsical design inspired by nature or a Gothic design that reflects a couple’s darker style, I approach each creation with the same level of dedication and attention to detail.

What’s a lesson you had to unlearn and what’s the backstory?
One of the biggest challenges I faced in transitioning to my own business was undoing the traditional culinary mindset of working oneself to exhaustion. In the world of fine dining, there is often a prevailing belief that success is achieved through constant hard work and long hours. This mindset can be detrimental, leading to burnout and a lack of work-life balance. I had to consciously break free from this mentality, realizing that true success lies not in working constantly, but in working efficiently and creatively. By prioritizing my well-being and establishing boundaries, I’ve been able to create a more sustainable and fulfilling career path for myself.

I’ve learned to embrace and even thrive on the challenge of being judged as a cottage-based bakery. Despite the initial skepticism that some may have about a business operating from a non-traditional setting, I’ve proven that excellence knows no bounds. My resilience in the face of such judgments has fueled my determination to deliver exceptional quality and service, showcasing that the true measure of a bakery is not its location but the skill and passion behind its creations. I firmly believe that one should never judge a book by its cover, and my success is a testament to that belief.
