Austin, appreciate you joining us today. What’s one of the most important lessons you learned in school?
From an ADD high school student who struggled with focus and learning, to a culinary success at the top of my class! My journey is proof that success isn’t a straight line. In culinary school, I harnessed my creativity and hands-on skills, thriving in a unique class and lab format. It helped figure out that the way I learn is not through books but through hands-on practice. I graduated in the top 2% for lab work, aced my final with the highest score, and was the only one to complete a complex dessert. This isn’t just my success story; it’s a tale of transforming challenges into triumphs through passion and perseverance.

What sets me apart is that family is at the heart of everything for me. This ethos is reflected in how I treat my teams at TRIS and The Kitchen, more like family than staff, fostering a deep sense of partnership and dedication. Named after my daughter, TRIS isn’t just a dining venue; it’s a celebration of family, passion, and excellence. We’d love to hear a story of resilience from your journey.
Towards the end of culinary school, an externship opportunity at The Mansion at Turtle Creek in Dallas caught my attention. Despite being turned away repeatedly due to lack of restaurant experience, I persisted, applying almost daily and driving there from Austin to Dallas to apply every Friday. Eventually, my determination paid off, and I landed the externship, albeit with minimal pay, relying on my mom’s support.
But the experience was priceless. The Mansion became my classroom, teaching me invaluable lessons that some chefs take a decade to learn. It was there I truly understood the essence of teamwork in a kitchen. It wasn’t just about my individual skills; it was about how well we all worked together under strong leadership. Despite the financial struggles and challenges, I’d relive this formative journey in a heartbeat. It shaped me not just as a chef, but as a team player and a leader in the culinary world.

What do you think helped you build your reputation within your market?
Hospitality! Hospitality is the heart of a memorable dining experience, often overshadowing even the finest dishes. Ensuring guest happiness and building lasting relationships are key to bringing them back to your restaurant. I firmly believe that the world’s best cuisine cannot compensate for poor hospitality. It’s crucial to not only ensure your front-of-house team is exceptional but also to personally connect with guests and gather their feedback. This direct input is invaluable, forming the cornerstone of your restaurant’s success. Remember, a meal is forgotten, but the experience lasts forever.
