Alright – so today we’ve got the honor of introducing you to Anisor Fernandez. We think you’ll enjoy our conversation, we’ve shared it below.
Hi Anisor, thanks for joining us today. Can you talk to us about how you learned to do what you do?
I have always loved creating things ever since I was a child and throughout the years, I have probably worked with a little of everything. Experimenting with various mediums such as watercolors, acrylics, charcoals, and much more have all helped me get to where I am now in my caking career. I am a self-taught cake artist, everything that I have learned has been through the process of trial and error throughout the years and a few online videos.
Learning to work with the various edible mediums was quite a challenge being that they are all temperature and moisture sensitive. The warmth from your hands can melt some of them and they can dry up and crack in a few minutes of being exposed to air. After a few years of working, I discovered some great online cake groups with both beginners and professionals who were happy to help answer any questions I might have. While I am a huge fan of learning through trial and error, finding these groups of industry professionals in the beginning would have saved me lots of time.
When attempting anything new I would say that perseverance is the number one skill you can have. Staying motivated and continuing on through all of the obstacles you are sure to encounter to achieve your goals and dreams.
Anisor, love having you share your insights with us. Before we ask you more questions, maybe you can take a moment to introduce yourself to our readers who might have missed our earlier conversations?
My name is Anisor Fernandez, I am a 32-year-old stay at home mom of two amazing girls ages 7 and 4. I am from a small Native American Village on the southern tip of Louisiana, and I am the sole owner and artist at A&M Cakery. My unique and high detail edible creations have made me a Multi Award Winning Cake Artist, being featured in several online and print publications. Throughout the years I have also had the pleasure of creating cakes for several celebrity clients and popular influencers.
I started caking seven years ago when my oldest daughter needed a cake for her first birthday, and I just never stopped. I have always loved arts and crafts and with caking I get to do it all from edible watercolors, chocolate sculpting, wafer paper and more. I get to combine all of these different edible mediums and bring my ideas to life. What makes it even more special is that you actually get to eat it afterwards. I take pride in providing my clients with not only a delicious tasting cake but also a memorable piece of edible art to display that is sure to keep their guest talking long after the event.
We try and make it as convenient as possible for our clients. We offer both in person and virtual consultations, cake tastings, a hand sketched preview of their cake, our expertise, venue coordination, along with delivery and on-site setup anywhere. Everything is made fresh to order from scratch from both organic and locally sourced products when available.
I believe the attention to detail added in every piece is what sets us apart from others. Before designing a piece, extensive research is done on the theme/subject and no shortcuts are taken. For example, if I am making edible pottery then it will be stamped at the bottom. I always aim to go above and beyond for my clients and for this reason, I never book more than one cake a week. This allows me time to focus solely on their design.
I am most proud of my entry in the largest judged cake show in the US, That Takes the Cake in Austin, TX. With never have competed before, I decided to take a chance and enter two pieces at the Masters/Professional level of competition. It was very important to me that my edible creations reflect where I was from and that livelihood. To my surprise both pieces won first in their category along with best in show and was the first perfect scoring piece in show history.
What do you find most rewarding about being a creative?
The sense of accomplishment after finishing a piece you’ve worked so hard on, there’s nothing better than that. I get to express myself and bring all of my crazy ideas to life. I love sharing my art with everyone, both creatives and clients.
Are there any books, videos, essays or other resources that have significantly impacted your management and entrepreneurial thinking and philosophy?
I am always aiming to improve and continue learning as much as possible. While many of my inspirations come from nature and Artist who work with non-edible mediums, Sugar Geek Show by Liz Marek has been invaluable. I’d highly recommend the website to any budding cake artist.
