Aaron & Essa , appreciate you joining us today. What’s the backstory behind how you came up with the idea for your business?
My husband and I have a combined 30+ years in the restaurant business. Our dream was to run a food truck, with great food people would fall in love with. Fast forward so many years, Covid hit, we took time during that period to research, perfect, save, and come up with everything possible we would need and want to pull off this dream of ours. We took a big risk and both resigned from our jobs and decided to make it happen. We planned and designed everything down to the layout of the Food truck, to our logo. We had some awesome help and guidance from friends and family to help support us along the way. Still scared of what to come, we were as prepared as one could be and took the big risk! Big risk equals big reward in our opinion.
As always, we appreciate you sharing your insights and we’ve got a few more questions for you, but before we get to all of that can you take a minute to introduce yourself and give our readers some of your back background and context?
When we first started this idea we actually wanted to open a taco truck but after scanning the competition around the valley we knew that would be hard to beat, as there are so many good ones already here. After taking a few trips to Nashville, we fell in love with the food. We thought to ourselves how the concept of Nashville style fried chicken is not well known around here yet, and we wanted to be the ones to bring it to the valley. As most people don’t know, Nashville style is the process of dunking the fried chicken in a season in Oil, and then topped with more seasoning, no actual sauces. Nashville style is often know as spicy but we made it so you can get Naked all the way to our Blistering Biddys heat level, so you can choose how spicy you are wanting to go.
When thinking about the perfect name for our food truck. We looked up alternative names for chicken, leading us to find “Biddy”which is another name for Hen or young chicken. Well, we serve Hot chicken so Hot Biddy’s seemed to be the perfect fit! My husband and I make a perfectly balanced team as he has always had the passion for cooking, and I having a background in Marketing and Accounting. We are most proud of the fact that we can provide great quality food, versus quick food, making almost everything on our menu homemade.
Any stories or insights that might help us understand how you’ve built such a strong reputation?
Two things- My husband really having the passion to serve and put out nothing less than perfect food for the people here. Cornering his own market around our area and making it his own. Once you try our food you can taste and see the passion behind it.
-Planning and doing a lot of research. We took the time to go back and learn the history of fried chicken and how Nashville style came to be an idea. The culture and history of it all so we can not only put out the best of its kind but know and respect where it all came from.
What’s been the most effective strategy for growing your clientele?
Honestly, genuinely connecting with your community. Taking the time to talk with people, learn, grow and appreciate life while doing what we love. Always being open minded and ready to roll with anything.
