Today we’d like to introduce you to Shirell & Faith Gallegos.
Hi Shirell & Faith, it’s an honor to have you on the platform. Thanks for taking the time to share your story with us – to start maybe you can share some of your backstory with our readers?
Home Girl’s Hibachi came to life in 2024 after a huge career change. In December 2023, I (Shirell) was excelling in my insurance career, I owned an insurance agency. In January, I had a change of heart about my business and by February my agency was sold and Faith & I were food truck owners.
We knew we had to come in with the bang and decided to do something that nobody had done in our state before. A hibachi food truck! Along with doing something new, we knew we had to bring the quality as well. All of our dishes are Halal, and made with the highest quality meats and seafood, we don’t use any junk ingredients, everything is prepped fresh daily, and we don’t currently work with any delivery services to ensure that our food is hot and of the highest quality when you receive it.
In our first month, we exceeded all expectations. For our grand opening, we had a line around the park Faith and I couldn’t believe it! Since then, our business has grown significantly. who would’ve guessed that we could do all of this with a food truck. We truly are blessed to have the support from each other as well as both of our families and from our communities here in Albuquerque, Rio, Rancho and Santa Fe, New Mexico.
We are so excited to see where this takes us, and will continue to strive to serve the highest quality hibachi meals in New Mexico.
We all face challenges, but looking back would you describe it as a relatively smooth road?
One of our biggest obstacles has been the food trailer itself. Who would’ve known that you would have so many issues when you have a restaurant on wheels. Things can be perfectly fine one day and the next day everything is going wrong. Could be the lights don’t work, could be somethings going on with the water pump could be a flat tire. You really just never know with a mobile business.
Appreciate you sharing that. What should we know about Home Girl’s Hibachi?
Home Girl’s Hibachi isn’t just a job or another stream of income for us, it’s our passion. We truly enjoy cooking and serving the community high-quality halal hibachi meals. We don’t cut any corners, all of our meat is hand Cut and trimmed daily. We Take pride in every meal we serve.
Right now, Faith and I are working at least 12 hours on a daily basis just to bring our concept to our community. If we’re not prepping or cooking, we’re doing things to maintain the trailer or doing social media marketing. It’s a lot of hard work, but it’s very fulfilling for the both of us.
What do you like best about our city? What do you like least?
Our favorite part about owning a food truck is making people happy with our food. We love to see a genuine reaction when somebody has tried our food for the first time.
Something that we dislike is the amount of time we spend getting things ready. It’s been very hard to find reliable staff so a lot of the work falls on both of us. We can’t wait to have a steady team to take some of the weight off of our shoulders. However, we are patient and truly don’t mind hard work.
