Today we’d like to introduce you to Jamie Maher.
Hi Jamie, please kick things off for us with an introduction to yourself and your story.
Hey! My name is Jamie Maher, I’m a pastry chef and small business owner in the Pensacola, Fl area. I’ve been baking since I was 14. After getting an associates degree in Baking and Patisserie from the Le Cordon Bleu I started my own business in 2017. I’ve worked for every different type of restaurant/bakery setting before deciding custom event baking was what I wanted. Large events and show stopping cakes are what I eventually want the business to grow into and I’m slowly making it happen
I’m sure it wasn’t obstacle-free, but would you say the journey has been fairly smooth so far?
Months after starting my business I went through a very messy and ugly custody battle and divorce, that paired with anxiety and depression made keeping my head above water so to speak very hard. If it weren’t for the support of family my business would have failed right there. I worked at established restaurants in the evening and baked and ran my business in every hour I wasn’t at the restaurants to become an established name in our culinary community. When covid hit the restaurant I worked at shut down and my business was then my sole source of income. I had to work harder to get the business and stay moving. I picked up every new skill i could attending the university of YouTube. I adapted to what our community needed at that time. Because of this my business took off, orders were flowing in and I haven’t had to go back to a restaurant since. The hours are long and there are no real off days and no one to pick up the slack when I’m failing but it’s worth it. No matter how tired, how overwhelmed or overworked I feel, my community trusts me with some of the biggest days of their lives and there’s nothing that is more rewarding.
Alright, so let’s switch gears a bit and talk business. What should we know about your work?
I’m a pastry chef, I own Rollin’ in Dough in Pensacola, Fl it’s a cottage food law bakery specializing in specialty cakes. I’m known for my cake pops and wild shaped cakes. I’m most proud of the charity work and community outreach my business does. I help with a homeless thanksgiving every year and donate tons of product for various projects around town. What sets me apart is my wide range of products I offer and my willingness to recommend a better fit if I feel I can’t achieve what you’re looking for. I pride myself on being one stop dessert shopping, but I won’t take on an order I don’t think I can do well.
Is there something surprising that you feel even people who know you might not know about?
I am part of a local Mardi Gras krewe that supports and raises money for Escambia search and rescue. I also volunteer with a community outreach program, fearless community that focuses on helping people get of the street.
And that I am asked several times a year to sponsor events within my community , which being a part of those events really shows my future clientele that this is my hometown and I care about the people within the town.
