Alright, Kyle thanks for taking the time to share your stories and insights with us today. We’d love to start by getting your thoughts on what you are seeing as some the biggest trends emerging in your industry

One of the biggest trends I’ve seen since opening our food truck in the middle of the pandemic is that more and more people want the flexibility to eat outside or on their own terms. Having the ability to offer outdoor dining was a huge benefit at the height of the pandemic and even so now three years later.

Kyle, before we move on to more of these sorts of questions, can you take some time to bring our readers up to speed on you and what you do?

I am the third owner of Uptown Scratch Kitchen in St. Augustine. I worked for both previous owners and when the opportunity came to purchase the truck, I jumped, even knowing it was crazy to reopen during the pandemic!

We offer something for everyone, from fresh fish and shrimp to chicken, pork, burgers, and cheesesteaks!

Since opening in 2015, we have been regarded as one of the best food trucks in the area, but what I’m most proud of is we are ranked top 3 restaurants in all of St Augustine on TripAdvisor.

Can you share a story from your journey that illustrates your resilience?

I think is deciding to reopen during the pandemic was a truly resilient move. It turned out to be a great decision because so many people wanted that ability to dine outside and we provided that and with great food options to boot!

Any stories or insights that might help us understand how you’ve built such a strong reputation?

I think the one thing that truly helped build our reputation was that, not only do we serve incredibly flavorful food, we are consistent with our food and hours. If we say we’re going to be there, we are.
