Alright, Chef thanks for taking the time to share your stories and insights with us today. So let’s jump to your mission – what’s the backstory behind how you developed the mission that drives your brand?
Outdoor Eats is on a mission to elevate the outdoor food experience through fast, easy and tasty recipes. We also have a series of pocket-sized trail test cookbooks that are perfect for any outdoor activity.
I’m a classically trained chef with over 20 years of culinary and food product development experience but I also really enjoy hiking and backpacking. On my first trips, I noticed that most folks were just boiling water, adding it to a bag and calling it dinner. For me, this was a missed opportunity to have a tasty meal that re-fueled in a better way and complimented the experience.
So I started testing recipes that were ready in 30 min or less, 10 ingredients or less, required no dehydrating and were mindful of different dietary restrictions. This early development lead to over 300 trail-tested recipes on our website outdooreats.com and growing YouTube channel: Chef Corso as well as a nationally airing TV show called Outdoor Eats TV. It’s all about getting folks outside, having them eat well and sharing of a great meal outdoors.
Food matters and it can be so much more than just calories or beef jerky and granola bars. It has the power to connect us and bring us together and when we are outdoors, everything just tastes that much better
Chef , love having you share your insights with us. Before we ask you more questions, maybe you can take a moment to introduce yourself to our readers who might have missed our earlier conversations?
My name is Chef Corso, host of Outdoor Eats TV and founder of Outdoor Eats. I’m a classically trained chef, training in Napa Valley and Northern Italy. I have over 20 years of culinary and product development experience ranging from a research chef to culinary director of a multi city restaurant group in the Pacific Northwest to culinary trainer for Starbucks Reserve brand.
I’ve created a new path for myself and focuses on teaching and sharing that you can eat well while you’re on your outdoor adventures. We provide single recipes, full trip meal plans, pocket sized cookbooks, social media/YouTube content as well as a TV show. The show is combination of a classic educational food network style show, with travel and adventure. It’s a fun, engaged and approachable combo.

I think consistent connection is key. I do my best to engage with questions and comments directly through social media channels. This shares that a person is actually behind the brand and will hopefully foster a lasting connection
Can you tell us about a time you’ve had to pivot?
I decided to do a rebrand of the company back in 2022. The original name for the company was MONTyBOCA (mountain x mouth in Spanish). While this was nice and fun once people understood it, it required a layer of explanation that was a barrier for understanding the business. I rebranded to Outdoor Eats in 2022 as a straightforward, approachable and easily digestible name that shared what we do in a better and quicker way.
