We’re excited to introduce you to the always interesting and insightful Mac Marsh. We hope you’ll enjoy our conversation with Mac below.
Hi Mac, thanks for joining us today. What’s the backstory behind how you came up with the idea for your business?
I’m an environmentally conscious individual with a deep passion for sustainability. While working at the Art Hotel, I noticed the excessive amount of water being wasted from using the “running water method” to thaw frozen food. The method requires fresh water run over the food until the food is fully thawed. The faucets ran continuously, it became evident that water conservation was not a priority in the restaurant industry. This observation struck a chord with me. I began researching the impact of water waste in restaurants and discovered alarming statistics about the industry’s high consumption rates and subsequent environmental consequences. Moreover, I found that existing water-saving solutions were either costly or involved significant operational changes, making them less accessible for smaller businesses.
Determined to address this problem, my excitement grew as I realized that I could make a significant impact by developing an innovative and affordable solution tailored specifically for restaurants. My vision was to create a defrosting appliance called Boss Defrost that would not only reduce water usage but also minimize costs for restaurant owners.
To validate my idea, I reached out to restaurant owners, water conservation experts, and environmental organizations. I discovered that while water conservation was on the radar of some establishments, they lacked accessible, cost-effective solutions that seamlessly integrated with their existing operations. My goal was to fill this gap by offering a comprehensive and user-friendly system that required minimal disruption.
My logical reasoning for pursuing this endeavor was supported by several factors. First, water scarcity and environmental concerns were growing global issues, and restaurants were significant contributors to water waste. By targeting this industry, I believed that I could make a substantial and measurable difference. Second, the cost-saving potential of Boss Defrost appealed to restaurant owners, as reduced water consumption meant lower utility bills and improved profitability. Boss Defrost saves 98.5% of water while thawing food and the unit will pay for itself in 1-3 months.
Driven by my passion for sustainability and the belief that every drop of water saved mattered, I embarked on the entrepreneurial journey to establish my water-saving business for restaurants. With a combination of empathy, a sound business plan, and a clear understanding of the problem I aimed to solve, I felt confident that Boss Defrost would create a positive impact while offering practical benefits to both the environment and the restaurant industry.

Great, appreciate you sharing that with us. Before we ask you to share more of your insights, can you take a moment to introduce yourself and how you got to where you are today to our readers.
Boss Defrost was invented to conserve one of our plant’s most precious resources – potable water. Boss Defrost is an NSF certified water saving kitchen appliance that
mimics the USDA’s running water method for thawing food – but uses up to 98.5%
less water. It’s portable, affordable and sustainable. It can be used in residential and
professional kitchens. I see Boss Defrost conserving billions of gallons of water
across the world. As a company, Boss Defrost is mission driven. For us, it is crucial that our fresh
water resources do not go to waste. We realize our supply of fresh water on this earth
is limited, and we are determined to utilize this resource wisely. With Boss Defrost,
we can pivot away from a wasteful practice toward a sustainable one. Everyone wins.
What I’m most proud about as a company is the people that are part of it. We all have
sacrificed a lot to make this vision become a reality. Our company holds true to our
values and we all see the positive impact Boss Defrost will make. I would also like to
highlight the chefs who are using Boss Defrost. They are the real bosses – which is a
hint to the origin of the name “Boss Defrost.” The power is in their hands to
transition into a new industry standard. So, for the chefs out there that are stepping
up, thank you! You are the real heroes.

Can you share a story from your journey that illustrates your resilience?
In the early stages, we faced several setbacks and obstacles. We encountered funding difficulties, technical hurdles, and unexpected market shifts that threatened the viability of our business. We launched right before the pandemic hit. Our main audience was geared towards restaurants. It was extremely difficult to get our product out there. During these challenging times, instead of giving up or getting disheartened, we embraced setbacks as learning opportunities. We realized that adaptability and perseverance were crucial for our success.
Despite the hurdles, we remained committed to our vision. We made strategic adjustments to our business model. As our team continued to face setbacks and obstacles, their resilience grew even stronger. We celebrated small wins, learned from failures, and maintained an unwavering belief in our mission. We look at each Boss Defrost sold as a seed that is planted. Gradually, our efforts started to pay off. More people started seeing the possibilities with Boss Defrost. The ability to save water and money in their kitchens has been a win-win for everyone. We now have Boss Defrost’s in 38 states and in Canada as well.
It’s a good reminder that even if you have setbacks, it’s imperative to see your vision through.
