Alright – so today we’ve got the honor of introducing you to Sudipto Ballav and Chaitali Bose. We think you’ll enjoy our conversation, we’ve shared it below.
Hi Sudipto & Chaitali, thanks for joining us today. How did you come up with the idea for your business?
Hunger Square was formed in August 2020 in the midst of the pandemic, at this given point we realised that most people were working from home and had long hours of work which gave them barely any time to cook a meal for themselves ,specially for people who were living alone , there were a lot of Indian meal services that were offering there services on social media but none of them operated legally or had a license , hence there was a huge question about hygiene specially during the pandemic. We were the first licensed Indian meal prep company to operate from a commercial kitchen which was certified. In the initial months we barely did 20-25 meal boxes a day but as the good word spread within three months our numbers reached almost 250 boxes a day along with large catering orders. We not only served in Chandler but started supplying all over the valley in cities like,Tempe,Phoenix, Mesa, Scottsdale, Peoria etc. In December 2020 as a company we decided to go the dine in restaurant format and started our 110 seater outlet in Williams ,in Northern Arizona.

Sudipto & Chaitali, love having you share your insights with us. Before we ask you more questions, maybe you can take a moment to introduce yourself to our readers who might have missed our earlier conversations?
Hunger Square is a food service company that was started in 2020 during the peak of pandemic from a cloud kitchen in Chandler,Az….the main goal was to provide home style ethnic Indian food to the large Indian community present in the area….with our quality food and the word of mouth we soon started having customers from across the valley ….This was the time when we decided to start catering and soon we were serving clients to as far as Flagstaff and Yuma. Even though there were others providing the same service we were the only registered Indian meal prep service operating from a certified kitchen and provided delivery service. With the success of the meal prep we decided to start our restaurant and thus we started the 110 seater dine in facility in Williams in Northern Arizona near the Grand Canyon.
We are extremely proud of our unique operational technique of micro menu which changes everyday and gives the guest an entire experience of freshly cooked home styled meals.

We’d love to hear a story of resilience from your journey.
As we all know due to the extreme shortage of the labor force ..specially in the restaurant business …daily operatios have really been tough ….to prevent the existing staff force from being burnt out we stretched our working hours to almost 16 hours a day for months and there were days between Chaitali and myself we ran the entire show ….right from dishwashing to cooking to serving to bussing….every single thing. We just had to gather all our strength to dive in to it full swing.

How’d you build such a strong reputation within your market?
Being extremely detail oriented in the quality of food served, sticking to the authentic taste and welcoming everyone with the traditional Indian values of hospitality helped us create a reputation for ourselves in the business
