Hi Marco , thanks for joining us today. We’d love to have you retell us the story behind how you came up with the idea for your business, I think our audience would really enjoy hearing the backstory.
After working fo so Many restaurants and not being able to show my creativity I lost the fear of the unknown and decide to open a food truck
Awesome – so before we get into the rest of our questions, can you briefly introduce yourself to our readers.
My name is Marco Espindola from Mexico City , I migrated from Mexico City to New Jersey USA on 2000 , and started working on restaurants since , love cooking since I was little so this was great opportunity for me , after many year of learning from the best (other cooks) in 2016 I decided to open a food truck not know that the market wasn’t gonna be easy target, I discovered so great places/trucks with a great food but I also discovered that that’s the beauty of the kitchen that each chef has they unique touch , but it wasn’t easy to enter in a field that wasn’t my expertise, I knew how to cook but I had not idea about logistics, legalities, economics of the Bussines, but as always there is people that will help you and others will turn the back on you , the good quality that I have is that I never take NO as an answer I’m really persistent so we open the food truck and that’s when all started Working 7 days a week with a pregnant wife as a cashier it was scary sometimes but not impossible, Gettin every day at 6am asking god to have me the wisdom and the spirituality that I need for that day he definitely hear me and after a year we were able to buy our second truck, started get recognized in town and at some point we went to the dogwood festival in Fayetteville and we won the first place on a food truck competition (out of 45 trucks ) as best dish of the competition, having 2 trucks put me on the nesesity of learning and become a mechanic, plumber, electrician, etc, to safe some money on the business, we got to the pint that we had 4 trucks but pandemic hit so we sold one we stop working and become more grateful for my family and other or life itself. Today we have 3 trucks and this year it was our first year that we participated at the Nc state fair . Also during this all years we were able to give back to our community by providing meals to people that lost they homes when the hurricane hit Nc few years back , we really involved with a locat homeless shelter here in Raleigh by donate meals, clothes etc , we did a fundraiser for an officer that got shot while in duty and alway be aware of the people that came to our willow see how can we help , it was an instance where a lady was seated by her self and she look worry, so I step out of the teuck so turns out she was depressed so I stay with her till someone came and pick her up , another time we did an school event and it was at least 500 kids but I noticed that a kid was seated by him self so I went and seat with him and eat lunch with him turn out he was autistic and we had a great moment he share that he love video games and art , and that is what I say that is the most rewarding things about my business that I can serve to others when non one cares.
Can you share one of your favorite marketing or sales stories?
I never gonna forget this one , I wanna be part of the rotation for this venue so I email the lady not response so keep emailing her and finally one day she responded so she said on the email that she doesn’t need more trucks of my food caterogy so I call her and I explain that each truck is unique and spend some time explaining her why I can be a good fit , so she leasing to me and finally she said I will keep you in mind if I need a truck, so I said thank you so I hang out and 2 seconds later I call her back and I introduce my self and I said “” may be i say something that I shouldn’t say or May I didn’t say something that I should say so let me try again “” she laughed and after I finish for second time she said well whatever you did just work because I’m gonna give you a chance , six years later we still doing business and I’m the only truck that stay with her from back then
