Adeline, thanks for taking the time to share your stories with us today To kick things off, we’d love to hear about things you or your brand do that diverge from the industry standard
When you love food & wine, Burgundy is a wonderful destination. The area includes many great restaurants & almost 4,000 winemakers, most of them spending their time in the vineyards or in their cellars making their wines but very little time to offer to visitors. Most of the large wine companies will be open to public but you may miss what makes the beauty of our region, the diversity of the terroirs, the people making the wines and their stories.
As a chef & wine expert, I’m able to offer a true unique & authentic experience and I like to spend time with my guests sharing my passion for food and wine, especially my love for our beautiful Burgundy region.
If you are more into food, I will teach you how to cook a typical Burgundian meal, classic French recipes or other recipes I have created. And while you will taste what you have prepared during a lunch or dinner, I will give you a short education to Burgundy wines.
If you are more into wine, depending on your level of expertise and your appetite to learn, I will design a customised program, including an education class, wine tasting of all different level of appellations and from various winemakers, visiting the vineyards and understanding the difference of our terroirs as well as visiting some winemakers. And while doing all of this, you will of course have the opportunity to taste some of my favorites recipes.
At the end of the day, I’m delivering an experience I would love to have, very personal, fun, and blending food & wine..
After all, wine is meant to be shared with food & friends.
Awesome – so before we get into the rest of our questions, can you briefly introduce yourself to our readers.
I’m a passionate Artisan Chef, who just loves the marriage of food and wine. I was raised in Beaune, in the heart of Burgundy, by parents with a distinguished family history in the wine business (Master of Wine) – and so I was exposed at an early age to the rich heritage and culture of the area’s legendary wines & fine cuisine.
I followed my heart to train as a chef, and was lucky enough to work or watch alongside some of the best Michelin-starred Chefs such as Michel Bras, Pierre Gagnaire, Ferran Adria, David Zuddas and the Pourcel twins.
Over the years, I’ve developed a love and strong foundation for creative cooking, fuelled by extensive travel around the world – including to Turin, Italy, where I fell in love with Italian gastronomy and did a culinary school.
From 2006, for more than 10 years, I lived in Atlanta, Georgia, and shared my true passion for food & wine as a private chef, as a cooking instructor and as a contributor for Atlanta Magazine.
In parallel, I started to develop my expertise in wine, something I continue to do on a daily basis.
My family and I moved back to our roots in Beaune 5 years ago, and launched “Terroirs By Adeline”, a new concept based on the creation of unique and exclusive food & wine experiences.
Over the years, we have developed an extensive network and connections with winemakers from the region and beyond. We’ve launched a very exclusive wine club and have plenty of other projects in development.
How about pivoting – can you share the story of a time you’ve had to pivot?
With the infamous Covid, we have to close our lab for quite a long period… Without being able to host guests and deliver our experiences in person, we turned ourselves to digital like many others, and started to deliver online classes. We also launched a little boutique wine club with the goal to continue to share our passion for Burgundy wines, We designed customised wine cases to help our members to discover or learn more about Burgundy. For example, a case focusing on the famous appellation of Meursault, bending different levels of appellation, Villages & 1er Crus from different winemakers or another one focused on a single winemaker, giving you a complete overview of the wines he is producing, Members would also have access to online classes and wine description cards to expand their knowledge.
Like the experiences we deliver in our lab, we aim to deliver a very personal experience as well through our wine club. So do not expect to see any advertising but maybe you’ll hear from one of your friend who is passionate about Burgundy wine.
What do you think helped you build your reputation within your market?
Real expertise : I’m always trying to improve myself, continuing to learn about wines and cooking, expanding my network with winemakers, testing & creating new recipes…
