We caught up with the brilliant and insightful Kitt West a few weeks ago and have shared our conversation below.

Lost Fairy Sweets offers completely unique desserts. We don’t have a set menu, instead we work with clients to create a flavor pallet completely their own. This allows every dessert to elevate and add to an event, rather than sit in the background.
Great, appreciate you sharing that with us. Before we ask you to share more of your insights, can you take a moment to introduce yourself and how you got to where you are today to our readers
My name is Kitt. I started dessert making as young as 4-years old. Baking was a tradition passed down from my great grandparents in the form of traditional Swedish food, such as Lefse (a flatbread made from potatoes).
Lost Fairy Sweets (LFS) creates desserts that taste like a mix of traditional homemade flavors and new exciting ones.
Instead of trying to pick a dessert from a case to try and match your event, LFS creates dessert centerpieces and flavors that fit seamlessly into your theme. We use as many locally sourced Texan ingredients as we can. We support small farms and other small businesses from around Texas to bring you a truly authentic product.
I am most proud of the flavors and recipes I have discovered through my businesses. Working with clients to find flavors from their family meals, favorite foods, and memories creates such unique and wonderful creations.
Lost Fairy Sweets truly is run solely by me and occasionally my wonderful mother. We research and test everything we make to get the final product perfect for every client. Nothing makes me more joyful than seeing the smile on someone’s face when they receive their dessert.
Can you talk to us about how your funded your business?
I used skills from previous career as a Child care worker to get a freelance babysitting/part time nanny jobs. I also took up a part time job in the field of my small business to gain more professional experience. Taking in these two part time jobs allowed me to have freedom over my schedule and work whatever hours I wanted, and spend whatever time developing my business I wanted. Because I could work whenever I wanted I could make far more money than I did at my original full time job. Working freelance also allowed me to meet many new people and introduce my business to them, I received many of my first clients through this.
Has your business ever had a near-death moment? Would you mind sharing the story?
Innovation is born from necessity. And I learned that the hard way. One of my shortfalls as a cake artist was that I did not like drawing in icing. I depended on printed edible images for any specific requests for business logos or detailed drawings. Eventually a time came when the store I ordered images from was not able to print, and I could not find anywhere in town to print in such short notice. This client happened to be one of my bigger ones, and brought me a lot of other business. If I didn’t deliver this order well, it would have honestly been devastating to my client list. I spent the whole night learning a new frosting technique and making a custom stencil in order to produce their detailed logo. And when delivered, they were actually much more impressed with this technique opposed to the printed image.
