Alright – so today we’ve got the honor of introducing you to Veronica. We think you’ll enjoy our conversation, we’ve shared it below.
Hi Veronica, thanks for joining us today. We’d love to go back in time and hear the story of how you came up with the name of your brand?
Credit for our name, Rainbowlicious Deelites, goes 10000% to my mom, Vivian Soto! She originally started this business years ago doing cantinas year-round and rum cakes during the holidays. A forever optimist, I recall my mom first coming up with the name. She wanted to evoke feelings of happiness, that joy of seeing a rainbow after a storm, and tie it in with the joy of eating something extraordinarily delicious.
When the company I was working for closed in October 2020, just around the holidays, she reminded me that I and many others could all use a little rainbow happiness and deliciousness in our lives. She encouraged me to bring Rainbowlicious Deelites back to life, with my own personal twist. Focusing on just rum cakes to start, I’ve been able to explore my culinary + creative dreams by expanding into cookie decorating and making custom cakes plus more.
It’s such a joy to be able to bring people’s visions to life in dessert form. It’s even better when I can see how much they enjoy our treats!



Veronica, love having you share your insights with us. Before we ask you more questions, maybe you can take a moment to introduce yourself to our readers who might have missed our earlier conversations?
I have enjoyed being in the kitchen as long as I can remember. Whether it was watching my abuela or madrina, Alton Brown on Food Network, or Julia Child on PBS, I absorbed it. Being able to combine ingredients and create something entirely new (& delicious) has always been fun for me. By high school, I found people didn’t just want to taste my treats – they were willing to pay for them!
And though I didn’t pursue the culinary world professionally then, I never stopped cooking and baking. Fast forward to 2020, in a bind, I realized turning to my roots and passion could help. And so it did! Rainbowlicious Deelites was brought back to life and it’s now stronger than ever before. Focusing on making your dessert dreams come true, we offer rum cakes in a variety of flavors, decorated sugar cookies (look gorgeous, and taste even better! find myself taste testing too often at times), custom cakes, and more!


Can you open up about how you funded your business?
Another thing I can credit 1000% to my mom. The second I told her I was considering the idea of baking as a side hustle during the 2020 holidays, she not only encouraged me to do it under Rainbowlicious Deelites, she gave me $100 to buy all initial ingredients. Thankfully, inflation we’re experiencing now hadn’t yet hit, so her investment went a long way. Then, thanks to amazing friends, family, and former Rainbowlicious Deelites customers, we had a really successful holiday season. I was then able to reinvest profits back into the business. Since then, all of our profits to back into the business, funding our growth and allowing me to expand my skillet. This all lets me do more for Rainbowlicious Deelites and our customers.


Any advice for growing your clientele? What’s been most effective for you?
A combination of word of mouth, happy repeat customers, consistent social media posting, and maintaining a good website have all led to steady growth of clientele. The best part, not only are our customers growing – so is our average order! A client can come in for a rum cake, see the rest of our offerings, and it goes from there. I’m really proud to show our treats don’t just look good, they taste amazing.
