Hi LAURA, thanks for joining us today. What’s the backstory behind how you came up with the idea for your business?
Our story started with date nights! We always found ourselves ordering skillet cookies, but we realized something was missing: the ability to make it exactly how we wanted. We dreamed of a place where you could build your own. In 2016, we turned those date-night dreams into The Scookie Bar, giving everyone the power to choose their cookie, their ice cream, and their toppings for the ultimate custom SCOOKIE! (word that we trademarked).
LAURA, before we move on to more of these sorts of questions, can you take some time to bring our readers up to speed on you and what you do?
We are most proud of the longevity and the community we’ve built since 2016. In the fast-paced world of food trucks and dessert trends, staying true to our quality and seeing “Scookie” become a household name in the Valley is our biggest achievement. We’ve been part of weddings, birthdays, and thousands of “date nights” just like the ones that started it all for us.
At the end of the day, we realized that the best dessert is the one you design yourself. We provide the warm cookie and the cold ice cream, but the masterpiece is yours. Every Scookie is built to your taste buds, not ours! We believe dessert is personal, and everyone’s ‘perfect bite’ looks a little different. That’s why we’ve built our entire business around the idea of customization.
Let’s talk about resilience next – do you have a story you can share with us?
Every great story has a turning point, and ours happened just as we were getting started in 2016. We had poured our hearts and savings into our very first trailer. We were ready to bring our date-night dream to the streets of Arizona, but we quickly learned a hard lesson: not everything is built with the care it deserves.
Because the trailer hadn’t been constructed properly by the manufacturer, disaster struck. We were driving down the freeway when the unthinkable happened—the trailer swayed, we lost control, and we watched in the rearview mirror as our entire dream was totaled right there on the asphalt.
In that moment, standing on the side of the freeway surrounded by the wreckage of what we thought was our future, it would have been easy to walk away. We had just started. We were shaken, and we had lost everything physical.
But that’s where our faith kicked in. We felt a deep calling that this vision was meant for more than just one accident. Instead of letting the wreckage be the end of our story, we chose to see it as a clean slate. We leaned into our belief that something better was coming, and we went back to work with more determination than ever.
That “better thing” arrived in the form of our first drivable food truck.
The accident was a blessing in disguise because it forced us to upgrade from a pulled trailer to a fully integrated, professional vehicle. It was safer, more efficient, and allowed us to reach our customers in ways the trailer never could. We traded the wreckage for our beautiful, signature bright teal truck with baby pink wheels, and it has been the heartbeat of our business ever since.
Today, when you see us pulling up to an event, you’re seeing more than just a kitchen on wheels. You’re seeing a miracle of resilience. We are so incredibly blessed to have this truck and this community. It reminds us every day that no matter how hard the “crash” might be, with enough faith and hard work, you can always come back bigger, better, and sweeter than before :)
Can you tell us the story behind how you met your business partner?
I met my partner/wife in 2014 outside of a bar in West Hollywood, California. The inside joke of our business is Laura is the white scoop and Veanney is the brown cookie and we met outside of a bar, so “The Scookie Bar” is ‘where the scoop met the cookie!’
