We caught up with the brilliant and insightful Alexis Nichols a few weeks ago and have shared our conversation below.
Alexis, looking forward to hearing all of your stories today. We’d love to have you retell us the story behind how you came up with the idea for your business, I think our audience would really enjoy hearing the backstory.
At the peak of COVID, My mom and I were standing at our kitchen island and we were bored out of our minds. My mom brought up our adventures while in Europe and the wonderful cuisines we would often indulge in while on our travels from various countries. The one that stuck out to her the most were Belgian Liege waffles from Brussels, Belgium, warm decadent waffles, often covered in powdered sugar and other various toppings. She knew with peoples American sweet tooth, people would go crazy for them, so she pitched the question to me. “Why can’t we make that into a business?”. So for days we were covered in flour and eggshells, writing what went wrong with one recipe and what went right in the others until we made the perfect batch. That simple question of “What if…” turned into “Why not”. With extensive research on how to start an LLC, (Limited Liability Company). Now we had the idea, we needed the logistics to get the ball rolling. Mom and I came up with our slogan, the design of our logo, where would we sell, the ingredients we would need, everything we needed to allow this idea come to life.

Alexis, before we move on to more of these sorts of questions, can you take some time to bring our readers up to speed on you and what you do?
All by chance. Mom has always been an ambitious person with grit to back it. With her creative mind and drive we were able to make this idea become a reality and keep it going for 5 years. Our product provides comfort for those who have traveled overseas and a sense of adventure for those who have not. We a very proud of the product because it has become a tradition for some during the holidays, Sunday breakfasts, or even for a pick me up during the week.
Can you share a story from your journey that illustrates your resilience?
We developed Wafel-Bitte during Covid and it was a challenge to make sales due to the isolation. We succeeded and were named 2024 Alabama Business Success Story-Resilience
