We caught up with the brilliant and insightful Shira Ladelsky a few weeks ago and have shared our conversation below.

Shira, looking forward to hearing all of your stories today. Do you have any advice regarding quality control and maintaining quality as your brand grows?

Making all of our Paletas by hand certainly isn’t easy, but it is the only way to make sure our clients receive the best and yummiest experience possible. Although we hope to expand rapidly, quality is the biggest priority and our #1 promise.

Awesome – so before we get into the rest of our questions, can you briefly introduce yourself to our readers.

We are newlywed husband and wife and we often joke that Pop-Pops is our baby. Having both spent much of our lives in Mexico, we both love Paletas and different Mexican flavors. Many of our flavors, like Dulce de Leche cheesecake, Mangonada, and Arroz con Leche are odes to the ice creams we used to enjoy as children. We are proud to say that all of the Paletas are handcrafted and we are always thinking of new recipes.

Any insights you can share with us about how you built up your social media presence?

We have always understood that having a presence on social media is vital for a business in this day and age. We love using the photos that customers take, with permission, of course, and repost any “tagged” images. A tip that we like to follow is having a set aesthetic. Ours is inspired by pop art; our location, cups, and social media profiles are all cohesive under that specific theme.

We’d really appreciate if you could talk to us about how you figured out the manufacturing process.

My husband and I both have always loved making paletas at home, which prompted us to take a course in making gourmet paletas. With the skills we learned in the course, we are able to efficiently make the most delicious, fresh paletas possible. My husband, Nissim, has a background in the cooking industry and not being complete newbies was certainly a lot of help. We have learned that using the freshest, most high-quality products is what makes the biggest difference in the long run.
