We were lucky to catch up with Elizabeth Hughes recently and have shared our conversation below.
Hi Elizabeth , thanks for joining us today. Parents can play a significant role in affecting how our lives and careers turn out – and so we think it’s important to look back and have conversations about what our parents did that affected us positive (or negatively) so that we can learn from the billions of experiences in each generation. What’s something you feel your parents did right that impacted you positively.
My parents raised me to be strong and independent. They told me that I could be/do anything that I wanted if I worked hard enough. I believed them

Elizabeth , love having you share your insights with us. Before we ask you more questions, maybe you can take a moment to introduce yourself to our readers who might have missed our earlier conversations?
My Father started Beckfield College in 1984. I had the privilege and honor to work for him and watch him build the business from 3 students to thousands. I feel that the reason he was so successful is because his whole reason for starting the college was to benefit the students who attended. During the 25 years that he owned Beckfield College, he never wavered from his sole purpose: to give non traditional students the opportunity to find a career. When I started Little Flour Baked Goods in 2017, I did it because I wanted to give the customers quality customer baked goods and recipes from my family to enjoy.

Can you share a story from your journey that illustrates your resilience?
During Covid, we had to be very creative. I have a very talented and innovative staff. We offered free delivery, and a drive through, toilet paper cakes, Covid germ cookies, and I will have to say that we thrived. The community rallied around us, and it was wonderful!

Okay – so how did you figure out the manufacturing part? Did you have prior experience?
Yes, we create everything at our brick and mortar store. To begin, I attended The Midwest Culinary Institute to get an Associate’s degree in Culinary Arts. When I opened our brick and mortar store, I combined what I learned through my studies with recipes that have been passed down through my family, especially those from my grandmother Elizabeth Brueggeman. We have always used real, quality ingredients and never substituted anything. It does cost more to produce, but you can definitely taste the difference. For my specific business plan, I have decided to scale using wholesale pricing and selling to vendors rather than opening franchises.
