Alright – so today we’ve got the honor of introducing you to Amber Wallace. We think you’ll enjoy our conversation, we’ve shared it below.
Amber, looking forward to hearing all of your stories today. Can you talk to us about a risk you’ve taken – walk us through the story?
I’d consider my business, Flamingo House, as one big risk to be honest. Starting this was one of the scariest things I’ve ever done– and I’ve done some wild stuff. Ever since I was in high school I knew I wanted to have a career in a creative field. Something outside of the normal. I went to an arts high school, New Orleans Center for Creative Arts, where I was in the Visual Arts program. But even then I knew becoming a working artist wasn’t the right fit for me. And since then, I’ve more or less been jumping around trying to find the right place for me. I’ve worked in fashion as a stylist, marketing at an advertising firm, many, many hospitality jobs and most recently as a English as a Second Language teacher. I’ve worked in education for the past five years upon gaining my masters at Columbia University. While I was fulfilled by advocating for my students, I felt majorly depleted of all creativity. The job was emotionally taxing and very mundane. It felt like I somehow ended up in a school because I didn’t know what else to do with my life. It has honestly taken me up until this moment (at almost 33-years-old) to find myself in a space where I feel like I belong. And even though I’m still unsure of the trajectory that this business will take me, I feel confident that it’s where I’m supposed to be.


Amber, love having you share your insights with us. Before we ask you more questions, maybe you can take a moment to introduce yourself to our readers who might have missed our earlier conversations?
Flamingo House Supper Club + Catering is a boutique catering company serving the Palm Beaches, and we love creating memorable experiences around food and community. We cater everything from intimate dinner and cocktail parties to work lunches and everything in between. We even offer weekly dinner drop-offs. On top of that, we host Supper Club events, where guests enjoy coursed, seated meals with thoughtfully paired drinks in a curated setting.
What makes us stand out is our playful, creative approach. From menu curation to food styling to branding, we love bringing a little funk and personality to everything we do. We also take the time to really get to know our clients, so we can create events that feel personal, thoughtful, and exceed expectations. Every event is unique, and we craft a catering experience that reflects each client’s individual style and taste. By understanding your vision, we design a custom menu tailored specifically to you.
We’re a small, relatively new business, but the care and sense of community we put into every job really shine through. We think of every detail, no matter how small, to make planning and executing an event feel effortless so our clients can just relax and enjoy the experience.


Can you tell us about what’s worked well for you in terms of growing your clientele?
While I’m still learning every day, I think that having a clear vision for my brand has helped grow by client base. This means that I am straightforward about the services I provide and keep up with my visual branding so that it has become recognizable in the community. I also try to keep an authentic tone on social media so that it sounds like a true personality rather than a concocted marketing strategy.


What’s worked well for you in terms of a source for new clients?
The best source for finding new clients has definitely been Instagram. While I’m no expert, I try my best to stay consistent, reply quickly and post quality images. As mentioned before, I also try to keep my branding strong. When potential clients inquire about services through my website, they are asked how they heard about me and the answer is almost always Instagram. More recently, I have gotten many “work of mouth” responses which is cool to hear that I am being recommended within the community,
