We were lucky to catch up with Maria Medrano recently and have shared our conversation below.
Alright, Maria thanks for taking the time to share your stories and insights with us today. Almost all entrepreneurs have had to decide whether to start now or later? There are always pros and cons for waiting and so we’d love to hear what you think about your decision in retrospect. If you could go back in time, would you have started your business sooner, later or at the exact time you started?
My plans were to start before covid hit and because of covid I had to wait a few more years to start what was planned at the beginning.

Awesome – so before we get into the rest of our questions, can you briefly introduce yourself to our readers.
I am writing to introduce myself and share my journey as a new food truck owner poised to bring authentic culinary experiences to our community.
Though it was never my intention to become a food truck owner, my passion for cooking and the encouraging feedback from family and friends have inspired me to take this leap. They often describe my meals as the best they’ve ever tasted, which has motivated me to expand my reach beyond my home kitchen.
As a Hispanic woman in business, I deeply appreciate the significance of sharing traditional food and the joy it brings to gatherings. Cooking for loved ones has allowed me to forge connections and create lasting memories. With my food truck, I am excited to extend this joy to a broader audience, fostering similar experiences for others.

Have you ever had to pivot?
Reflecting on our initial event, I recognize it was challenging, largely stemming from our limited experience and the fact that we were not yet known in the community. However, we remained committed to honing our skills and providing exceptional culinary experiences that honor our rich heritage. Through dedication to quality and continuous improvement, we have cultivated a loyal customer base and significantly refined our offerings.

Okay – so how did you figure out the manufacturing part? Did you have prior experience?
Our menu is a carefully crafted blend of our customers’ creative ideas and the invaluable insights we have gathered from our past events. It was noted that there were no vegan options provided in our menu. One of the other vendors informed us that there was a worker present who required a vegan meal. Unfortunately, we were unable to accommodate this dietary requirement at the time. The next day, in response to the growing demand for plant-based options, we introduced a vegan option that is not only delicious but also has the flavor of authentic Mexican food
We believe that having vegan plates available is vital for accommodating all attendees and promoting inclusivity at our events. By offering a diverse range of dietary options, we can ensure that everyone feels welcomed and valued.
