Hi Maricsa , thanks for joining us today. Looking back, what’s an important lesson you learned at a prior job?
The biggest lesson I learned was that you learn more from failure than success. There is no crying over spilt milk or burnt meringues. My first job ever I ruined a whole ovens worth of meringues for dinner service, which take hours of baking to perfectly dry out. I ended up having to call in my Chef and cut his morning off short. He came in with two coffees in hand, one for him and one for me, and was completely understanding. He told me not to cry over egg whites and sugar. He lectured me on being more aware of my surroundings but ultimately, he was not mad at me. Years later I felt myself getting upset at one of my bakers and I had to remind myself of where I started. My past had humbled me more than once and I will forever be grateful to my mentor for teaching me this lesson.
Awesome – so before we get into the rest of our questions, can you briefly introduce yourself to our readers.
My name is Maricsa Trejo, I am the Pastry Chef and owner of La Casita Bakeshop in Richardson, Texas! I got into baking because I love food and the community it can create between people. The community in Richardson has been so supportive and that love has allowed us to create a space for people to be themselves and feel safe. I am most proud of our team, they are all amazing people and we are constantly trying to make them their best selves.
How’d you build such a strong reputation within your market?
I started off doing pop ups and I was doing things that I had learned in Portland and New York, baking things that I had not seen in Dallas yet. I feel like our weird creations and bold flavors put us on the map first.
We’d love to hear a story of resilience from your journey.
I had to put my personal life on hold for a long time, for three years I worked 7 days a week with only Thanksgiving and Christmas off. I went through a very dark time while building my business and it was hard on my relationship with my husband. It almost stopped me from continuing with the business. That made me work harder in order to get to where I am today. My parents who are both from Mexico came here with nothing and I was not about to quit on my dream job.
