Darren, appreciate you joining us today. Let’s kick things off with your mission – what is it and what’s the story behind why it’s your mission?
Just Loaf’N New Orleans Poboy’s and Snoball’s was established after Hurricane Katrina. After many of my Family and Friends was displaced from the flooding of our beloved city New Orleans.
My Wife and I decided to open a place that looked,sound,and tasted like home. A real representation of The Big Easy, Just Loaf’N.
This would give dislocated NOLA Natives a Landing spot for employment and a place of formality.
It was very early on that We realized that God was using Us to comfort those who lost everything and was severely homesick. Several Customers at different occasions would visit the restaurant and there eyes would swell up with tears stating this is the first place that looked like home, sound like home and tasted like home.
This has been Our mission is to be the most authentic to New Orleans Heritage and Culture.

Shortly after opening Our 1st brick and mortar restaurant Just Loaf’N decided to open a Food Truck. Which does happens to be the first and longest running Food Truck in modern day.
We are super proud of being a trail blazer in fhe Food Truck industry in the Georgia Market. I’m honored to be a organizer and Board Member of The Food Truck Association of Georgia. FTAG is who spear headed legislation for reciprocity for one health inspection throughout the state of Georgia. Which Gov. Kemp signed in to law which benefits all Food Trucks in the state.
Let’s talk about resilience next – do you have a story you can share with us?
Resilience, to be a business owner you must have this trait. I’ve had over eight different locations some good some bad,but you have to learn something each time. Failure is not a option, but you have to know how to jump off a sinking g ship so your able to relaunch or pivot in new improved formula. DO NOT GIVE UP!!!
Can you tell us about a time you’ve had to pivot?
Covid has forced all businesses to pivot.
The work force has difficulty changed.
In the restaurant industry it’s been very difficult to find consistent employees.
We have pivot to kiosks for our customers to take orders.
This eliminates bad customer service, call outs, attitudes, and order mistakes on our behalf.
