We caught up with the brilliant and insightful Johnny Wesley a few weeks ago and have shared our conversation below.
Alright, Johnny thanks for taking the time to share your stories and insights with us today. So let’s jump to your mission – what’s the backstory behind how you developed the mission that drives your brand?
I’ve been in the restaurant industry for about 20years now. What I’ve learned is that it can be a very brutal and unforgiving industry. Especially when you’re just starting out. I wanted to create an environment that not only allows me to do what I love but in my own way at my own pace. I eventually hope to help others thrive. Without the harsh mental drain traditionally associated with kitchen life.

As always, we appreciate you sharing your insights and we’ve got a few more questions for you, but before we get to all of that can you take a minute to introduce yourself and give our readers some of your back background and context?
For those who don’t know me just yet, I’m Johnny “sweet cakes” Wesley a.k.a Mr. Ice Cream Man. Growing up I was always a big boy on the inside as well as the outside. Food has always been a huge part of my life. I made my very first batch of “ ice cream” around 5 years old. I basically poured milk over oreos and threw it in the freezer. Needless to say it didn’t turn out like I hoped. I always kept that interest though. 30 years later I’m the chef and owner of HTX Nitro Creamery. We’re not just a mobile ice cream shop. We are an experience! All of our frozen treats are made using liquid nitrogen. Our style is inspired by both steampunk and pop culture. We have a very industrial aesthetic but we also have flavors like Scotty Small (s’mores ice cream), Pink Lady ( strawberry, rose water, hibiscus), and Oreo Speedwagon ( cookies n cream). The only thing we really take seriously is our quality and our creativity.
Any advice for growing your clientele? What’s been most effective for you?
For me it was just going and sharing what we do as much as possible. Markets, pop ups, private parties. No matter the situation we’re always plugging the brand

How’d you build such a strong reputation within your market?
Consistency and quality over quantity! Since starting this business, I’ve made more than my fair share of mistakes. Doing too much, doing too little. But what I learned is I have to have consistent great quality product. If it’s not up to par it never reaches the customer.
