We’re excited to introduce you to the always interesting and insightful Nellie Wells. We hope you’ll enjoy our conversation with Nellie below.
Alright, Nellie thanks for taking the time to share your stories and insights with us today. Almost all entrepreneurs have had to decide whether to start now or later? There are always pros and cons for waiting and so we’d love to hear what you think about your decision in retrospect. If you could go back in time, would you have started your business sooner, later or at the exact time you started?
If I could go back in time, personally I wouldn’t change anything. I think my business started during a perfect season of life for my little family. Before we moved, I didn’t have the space for an in home bakery. We had moved less than a month before I decided to start my cottage bakery, on March 22, 2024. Now that I am coming up on my one year Anniversary with my small business, I am full of gratitude and I can’t wait to see what the future holds.

Great, appreciate you sharing that with us. Before we ask you to share more of your insights, can you take a moment to introduce yourself and how you got to where you are today to our readers.
I am Nellie, the Baker behind Nellie’s Natural Kneads. Let me tell you a little bit about me.
I have been a stay at home mom since 2020 when I had my first daughter. I have always been passionate about having a holistic lifestyle and I learned very quickly into my journey with motherhood that I wanted to provide my children not only delicious, but healthy snacks and meals. I started reading the ingredients on everything, I couldn’t believe how many ingredients something as simple as a loaf of bread could contain. As I continued to learn how to cook and bake from scratch, I mastered sourdough.
My cottage bakery started by gifting loaves to family, friends and neighbors. I enjoyed baking it as a hobby but before I knew it I was being asked “Can I purchase a loaf?”.
It started by word of mouth, and then I created a Facebook business page. I started doing craft fairs, pop ups, and the Wylie Farmers Market, which was amazing! I love being able to sell gut healthy bread, connecting with people, and being able to serve my family by having this business.
What I always say sets me apart from others is everything I bake is organic, dye free, seed oil free, and I only use high quality salt, sugar butter. I am really proud I have been able to grow my business while being home with my littles. It can be really hard work, but I am so grateful I am able to take weekly orders, while still home schooling and never missing a moment with them which means the world to me!
I offer a variety of artisan breads, treats, bread dips, and magnesium products. My best selling bread is my Jalapeno Cheddar and my best selling treat is my brown butter chocolate chip cookies. My magnesium products are wonderful, we use our whipped magnesium lotion every night!
My sourdough will always be organic, gut healthy, and long fermented which is best for our guts!

What’s been the best source of new clients for you?
I do Pop Ups at my favorite coffee shop, Shoemaker & Hardt where I meet so many new people who become customers and purchase during my pop ups. Facebook has been one of the best source to connect with new customers as well! Nothing beats meeting customers in person though.

How do you keep in touch with clients and foster brand loyalty?
I keep in touch with my customers through email and social media! I reach out to offer specials, to let them know about new items coming up, and to let them know when my orders are open. Since sourdough is 48 hour turn around, and I bake one day a week I like to keep my customers in the loop.
