Katherine, thanks for taking the time to share your stories with us today What do you think matters most in terms of achieving success?
Too often people will measure their success by the amount of money they make. And while money can be a good metric for success it doesn’t need to necessarily need to be the only focus. I think success is finding your passion and then having the grit and perseverance to see it through.



Great, appreciate you sharing that with us. Before we ask you to share more of your insights, can you take a moment to introduce yourself and how you got to where you are today to our readers
I own Tex’s Tacos food trucks and catering company alongside my husband. We specialize in high quality Tex Mex cuisine and cater corporate functions, weddings, rehearsal dinners, birthday parties, to just name a few. We’ve been able to create a great brand thanks to the support from the Atlanta community.
We acquired the company over 8 years ago after we both realized entrepreneurship was our calling. We have a passion for providing great food and service to our community.


Let’s talk about resilience next – do you have a story you can share with us?
A story from my journey that illustrates my resilience? I think to own a successful business, one must be resilient. Resiliency isn’t always about perseverance, but also awareness. It is important to focus on what matters and really lean into that and put your attention and effort into knowing when to pivot or keep going as is.
I think the biggest illustration of this concept is how we adapted during the Pandemic. We could have just closed our doors and gave into the hysteria, but we buckled down and keeping our employees paid became our number one focus. We began to ask ourselves, “how can we accomplish this? What can we still offer the public, while the world shuts down?” We focused on what we could control and adapted. Through this resiliency, we were able to not only survive the pandemic, but also provide financially stability to our team, never missing a paycheck.


How about pivoting – can you share the story of a time you’ve had to pivot?
Our company had to pivot during the Pandemic. We had to alter how we do business for over a year in order survive. Catering makes up about 80% of our business, so when that was wiped out, we had to pivot and start sending our trucks out to various neighborhoods. We created a new way of ordering by opting for a “touchless” pick up system. And it worked!
