Alright – so today we’ve got the honor of introducing you to Jessica Billings. We think you’ll enjoy our conversation, we’ve shared it below.
Alright, Jessica thanks for taking the time to share your stories and insights with us today. So, naming is such a challenge. How did you come up with the name of your brand?
Oh it’s definitely hard! We (my husband Chris and I) wanted to have a name for the company that conveyed a sense of mystery and tied in with the cryptid/mythical creatures theme. We spent a few days kicking ideas around but kept coming back to “Mythic Coffee Co” the flow was right, it wasn’t too long or short and gave just enough info to tell a little bit about our story.

Jessica, love having you share your insights with us. Before we ask you more questions, maybe you can take a moment to introduce yourself to our readers who might have missed our earlier conversations?
Absolutely, we struggled with our normal day-jobs through Covid. Everything was uncertain and scary and so we did the craziest thing you could do… we started our own business! We wanted something that could grow with us, and would give us back as much effort as we put in, especially since we just had a baby at the time.
After exploring a ton of different options, we started reaching out to different private coffee roasters. We tried a bunch of different flavors and joked about the “Cowboy blend” would be something a Jackalope would drink; the Mexican Chocolate might be something for a Chupacabra and from there, we started naming more and more and found our niche.
The coolest thing about working with our roaster is that the coffee isn’t even roasted until it’s ordered, so it’s always super fresh. We insisted on only al natural ingredients and hints of flavor. We’ve all had that “Pumpkin Spice” that was so flavored it completely overwhelmed the coffee… we didn’t want that. Since it’s fresher than most other coffees you can find, you don’t get that bitter after taste or the acid heartburn later.
I think our proudest moment was when we had fans drive for more than 2 or 3 hours just to come see us at events and tell us how much they loved our coffee; or maybe some of our super supportive fans in our online community. I never dreamed we’d have the following that we’ve amassed and we truly appreciate every single one!

We’d love to hear about how you keep in touch with clients.
It’s two fold. First is me (Jessica) in person. I try to participate in at least one event per month where we sell the bagged coffee and merch. It’s getting to the point that people know about us and word of mouth is spreading wider and wider. The second part is my husband (Chris) he does a lot of our marketing and online sales, so he plays a big role in the customer service aspect. We always try to make sure that our customers feel how much we appreciate them, because we truly do!

We’d love to hear the story of how you turned a side-hustle into a something much bigger.
Not yet, but we’re getting to a tipping point. More and more people are asking us when we will have our own shop or coffee truck, and it’s getting to the point that we are invited to more events than we can staff ourselves! I think the next milestone for us will be a coffee truck and possibly an employee to help run events.
