Can you talk to us about manufacturing? How’d you figure it all out? We’d love to hear the story.
At Mama Chea Cafe, we take pride in being a self-sufficient in-house manufacturing facility for our commercial vegan kitchen. Our journey into manufacturing our own products began with a deep passion for creating specialty vegan items that weren’t fully appreciated by many large corporations and profit-driven local retailers. Recognizing this, we decided to take a different approach, catering to customers who truly understand and appreciate our concept and alternative options.
When we initially started, we didn’t have prior experience in manufacturing our products at scale. We began our manufacturing journey by operating out of a shared commercial kitchen in the industry since 2017. This allowed us to learn and refine our recipes, production techniques, and quality control processes. It was a valuable learning experience that provided us with the foundation to eventually establish our own manufacturing facility.
As we grew, we realized the importance of having full control over our production process and maintaining the quality of our products. This led us to transition to our own manufacturing facility, where we now produce our products in small batches. This approach enables us to pay meticulous attention to detail and ensure that each item meets our high standards of taste and quality.
Finding the right vendor to manufacture our products was not a part of our journey, as we chose to manufacture everything ourselves. This decision allowed us to maintain complete control over the ingredients, processes, and overall integrity of our products. By focusing on in-house manufacturing, we can keep our recipes proprietary and ensure consistency in every batch.
Throughout our manufacturing journey, we have learned several valuable lessons. Firstly, we understand the importance of staying true to our values and catering to customers who appreciate our unique concept and specialty items. Additionally, we have realized the significance of building strong relationships with specialty brick and mortar stores, grocery stores, juice bars, and health food shops. Can you share a story from your journey that illustrates your resilience?
Throughout our journey, one of the major challenges we faced was pitching our products to large corporations, particularly well-known health food grocery stores. It has been difficult for us to get our foot in the door and supply our products to these locations. Many times, we have been turned down by buyers at these corporations who fail to understand or support our mission. Despite marketing themselves as local, fresh, and organic, we discovered that it was all a facade to attract customers and create the illusion of offering the best quality products.
This realization made us question the true workings of the food and beverage industry and how greed often drives decision-making. We found ourselves silenced, observing how these large corporations prioritize their profits over supporting small, specialty local brands like ours. It was disheartening to witness the lack of loyalty to our community and the customers who have put their trust in our products.
Another ongoing battle we face is securing shelf space at these large corporations. On one occasion, we pitched our brand to one of the most prestigious and expensive high-quality grocery stores in the US, only to be turned down. To our surprise, they later replicated our product line and introduced it as their own. This experience shed light on the cutthroat nature of the industry and how big corporations can easily overshadow and undermine small businesses.
Additionally, we encountered challenges related to manufacturing. Some large corporations require suppliers to use specific manufacturers approved by their corporation. This restriction limited our ability to continue manufacturing our products in-house and forced us to rely on a list of approved manufacturers. It often felt like we were being blackmailed and had our hard work and autonomy taken away by the overpowering influence of these corporations. While we understand the need for certain protocols, it is disheartening to see that not all protocols are applied equally, especially when it comes to manufacturing.
Despite these challenges, we remain resilient and dedicated to our mission. We understand the importance of following certain registrations and guidelines in the manufacturing process. These measures ensure the safety and quality of our products. However, we continue to advocate for a more inclusive and fair system that supports and uplifts small, specialty local brands like ours.
