We were lucky to catch up with Cassie Gifford recently and have shared our conversation below.

Cassie, appreciate you joining us today. What was it like going from idea to execution? Can you share some of the backstory and some of the major steps or milestones?

We relocated to Colorado and with that we left our favorite home town kombucha. Since we had been brewing our own kombucha and it was different than what we could find here we decided we should try to make a business of it. So we worked towards finalizing some recipes while looking into the legal and business side. It took a lot of research, learning and phone calls to learn what was needed. We shared with our friends who shared with their friends. We were able to start producing commercially via a local commissary, and with that the word spread and we nailed our first partner placing kombucha on tap at their restaraunt.

Awesome – so before we get into the rest of our questions, can you briefly introduce yourself to our readers.

We are colorado transplants who decided to start a kombucha company as we could not find a local company that was like our favorite from back home. We specialize in new kombucha drinkers but also satisfy experienced drinkers as well. One of our favorite customers is those who have had a no so pleasant experience with kombucha in the past. We love seeing theirs eyes light up with satisfaction. We were able to branch out when we built our production facility, and Hockey Themed Tap room, from craft kombucha to also offering craft beer in our tap room.

Have you ever had to pivot?

We honestly had to consistently make pivots but the largest and probably most defining turn was when we decided to go from producing just kombucha but also becoming a nanobrewery. Despite having years of homebrewing experience there was still alot to learn to scale up production and what does along with that.
